Ina's Spinach Pie and Kale Chips

Can spinach be any better than when it's baked in a pie? Ina Garten's Spinach Pie recipe makes me think not. This is another tasty recipe from The Barefoot Contessa Cookbook.
Of course, the picture in her book presents a slice of pie still gloriously green, but is that even possible? To cook spinach and have it retain bright green color? No matter. It's delicious.
Now, Kale Chips.

Has anyone mastered these (or heard of these)? I made them twice, but am still not convinced. I went into the kale chip experiment thinking it would revolutionize our greens consumption, but was somewhat bitterly (literally) disappointed. The internet is full of recipes for these, and they vary only slightly-using more or less oil, vinegar, and salt-so it appears someone is finding success here. I found my first batch way too salty and chewy, the second batch more toward bitter. Trying to cook the kale pieces evenly was difficult as the outer edges cook so much faster than the inside edges. In the end, my kids and I finished off an entire batch in one sitting, but the aftertaste was just about enough to turn me off of the chips forever. (Seriously, you won't want to burp for like 2 days). Now, though, after reviewing the online recipes and comments again, I'm tempted to do it all over. It seems such a shame to not master something that appears so easy and healthy and that some claim to be so delicious!
If you'd like to try them, you can begin your recipe/review research here:

Good luck!

For the kale chips, I had the most luck cutting out most of the center portion and tearing the rest in 2-3" pieces. Then they're mostly all the curly outer portion that gets nice and crispy. I didn't use vinegar, just olive oil and sea salt. I used a pastry brush to dab on the olive oil. I've been meaning to try them again with flavored salt or other spices. If you can get the roasted green beans to work, please post how!

I tried the kale chips about a week ago and after 3 batches I still couldn't figure out the best way to cook them. I tried different amounts of olive oil and sea salt, and in the end it just seemed like some pieces tasted better than others no matter what. The timing was also tricky. In the end, though, I will say that I couldn't stop eating them. They're strangely addictive.

If you go to this german site:
http://www.pundo3000.com/htms/1.htm
and then click through by pressing "nächstes >>". you'll see this project these folks did where they show the picture of the food on the food package, and then the way the product really looks. I like this because the photographer is really good and he put the food, for the most part, in the same position as it is in the packaging.

I've never heard of kale chips. i don't really care for kale though.

Over here (UK) we call it crispy seaweed, i know it isnt seaweed, no idea why we call it that - us Brits can be a bit odd at times!!
Anyway, the best recipe i have found is here
http://uktv.co.uk/food/recipe/aid/516246
It adds a bit of sugar so might help with your bitterness problem - good luck!
