Roasted veggies

We tried the Roasted Harvest Vegetables from the November issue of Everyday Food this week and really liked it. It's a combination of butternut squash (again with the squash), sweet potato, carrots, and garlic. I added shallots, as well. A yummy addition to a holiday or wintry meal.
