Rice Krispies Cookies

Peanut butter-chocolate chewiness. This Rice Krispies Cookie was really my family's favorite variety of no-bake cookie. This was also the only variety of Rice Krispies cookie we ever made at home. Never once made the marshmallowy kind that I recall. These are great for summer since the cooking time is brief and you don't have to turn on the oven.
Here's the recipe:

1 cup sugar
1 cup corn syrup
Combine in large pot and heat until just beginning to boil. (Really, just as you detect a simmer. Cooking too long makes them hard and way too chewy). Remove from heat and add:
1 cup peanut butter
4-5 cups Rice Krispies cereal (I like about 4 1/2 cups)
Stir gently to combine. Spread into 9x13 pan.
Melt and stir:
1 cup semisweet chocolate chips
1 cup butterscotch chips
Spread over Rice Krispies mixture. Cool at room temp or in refrigerator. Yum.

Speaking of bar cookies, this is a favorite little tool of mine. A tiny spatula, just right for lifting bar cookies and brownies and such out of the pan. (I use this way too much.)

Probably the most-used recipe in my collection, as well as the one I've had for the longest time...nearly 40 yrs. The only thing wrong with these is that you cannot eat just one!

YUM! I'll be making these on Wednesday with my little neighbors when they visit. They love all things chocolately and peanutbuttery in the kitchen!

Yum! We just made these but did it in the microwave! My little 3 year old was wanting cookies but I didn't want to turn on the oven so these are the perfect solution!

My grandma always made this variation on the classic marshmallow recipe. Thanks for bringing back the memory!

Those bars sound so yummy... I have a little spatula too... It isn't the same type but I use it all the time... I originally bought it at IKEA for my daughter to play with in her kitchen... but somehow I started to use it... and it was all mine after that :)~

These look awesome! We have a family recipe almost exactly like these, but instead of Rice Krispies, we use Special K. Anyway, they are delicious!!!

Scotcharoos are awesome - I'm not a big fan of cake so I prefer to have a pan of these on my birthday!

[wandered here to see some booklet making post, then started reading all your cookie posts...]
